Veggie Flatbread Remixed



Hello beautiful people! My recent boredom of eating meat, especially chicken has led me to embrace a more plant-based diet. I must say I am really loving it! No complaints thus far. As a result my creative juices have been flowing...in the kitchen : ) The other night I was excited to make a flatbread pizza using most of the veggies I had in my fridge. Prep work was just a few minutes of chopping some garlic, red peppers, red onions, and kale. Added some dates as another tasty topping. I used my favorite store bought naan from Stonefire and Sargento's 6 Cheese Italian. About 15 minutes in the oven at 350 degrees Fahrenheit and voila! The additional crunch factor from the kale was awesome, not to mention the nutritional boost it added.
